DeNiro played a down on his luck bounty hunter named Jack Walsh who must find and bring back mafia accountant Jonathan Mardukas - played by Charles Grodin.
Jimmy Serrano, the main villain, had ten million dollars embezzled from him by the do-gooder accountant, Jonathan Mardukas, also known as The Duke. While in the boxcar, The Duke deduced that Serrano was the drug dealer who cost Jack his job as a Chicago cop. Ironically, Dennis Farina, who played Serrano, was once a Chicago police officer in real life.

Answer: French Fries

When Eddie, the bail bondsman called on Marvin Dorfler, the rival bounty hunter, to join in the search for The Duke, Dorfler's prisoner asked "Can I at least have some French Fries?"
John Ashton played the character of Marvin Dorfler. You may have also recognized him from another Martin Brest movie, "Beverly Hills Cop". He played Sergeant Taggert.

We can only assume Marvin let him go. Carmine was played by Frank Pesce, another "Beverly Hills Cop" cast member. Pesce reprised the same role in "Beverly Hills Cop 2".

Jack remarked about all the agents wearing the same sunglasses and put on his own to mock the group. Mosley became upset and Jack couldn't pass up the opportunity to keep the heat on the ongoing gag; even going so far as to place a pair of sunglasses in an FBI car he stole to make a getaway.

In this scene, Jack and The Duke had no money and ran a scam on the owner of a local bar. After "confiscating" some of the "bad" bills, The Duke went to thank the bar owner, who identified himself as "Red," but had brown hair. "Do you dye your hair?" The Duke asked with a puzzled look. "It's short for Redwood," Red replied.

Brest appeared as an airline agent at the airport in Las Vegas. He had a great exchange with Marvin Dorfler. Brest also appeared in the first "Beverly Hills Cop" movie as a hotel desk clerk.

Serrano quipped this legendary line about the pencil after Joey and Tony had repeatedly lost Jack and The Duke. The fork was from another all time underrated favorite of mine, "Grosse Pointe Blank". John Cusak sublimely remarked "I killed the President of Paraguay with a fork. How have you been?"

"Send someone with a cash offer." Sidney advised Serrano on how to deal with his negotiations, but Serrano wanted to do it his way. "Relax Sidney. Have a sandwich. Have a glass of milk." Serrano told him. Milk was not exactly what you would think a mobster would prefer, but in the end, Sidney was right to be concerned.
Sidney was played by veteran character actor, Philip Baker Hall, who also appeared in "The Rock", "Air Force One" and "Boogie Nights", just to name a few of his movies.

Eddie told Jack to try to assure him "It's an easy gig; a midnight run." - hence, the title of the film. A popular urban myth is that police sometimes beat confessions out of a suspect with a phone book because it won't leave any marks. Unfortunately that's just not true.

Played by the ever talented, Joe Pantoliano, Eddie Moscone was an intriguing character who kept thousands of dollars rolled up in his cute, striped tube socks. We saw this when he paid Jack for his latest capture at the beginning of the film. Pantoliano, a veteran character actor was also known to close friends on the set of the Sopranos as "Joey Pants".
