Belgium, Germany, Spain, Portugal, Ireland, Italy, France, Austria, The Netherlands, Greece, Luxembourg and Finland are the twelve countries that started using the euro officially on January 1, 2002.
2. On 1 January 2002, one of these four countries (all members of the EU at the time) switched over to using the Euro currency. Which one?

Answer: Finland

Not all European countries are members of the EU, but of those who are, only Denmark and Sweden are not now using the euro (as at 2022). The UK formally left the EU in January 2020, having voted to do so in 2016 following a national referendum.
