The Ruby is the symbol for happiness, and pales in the presence of evil.

"Nij" and "Doj" were really Jin and Jod, children of Thaegan. They had a spell on them that made them seem nice. Everything they said was backwards, but Lief, cleaning the Topaz which clears the mind, understood them.

Lief tried to remember which gem was pink, when he remembered that the Ruby paled in the presence of evil.

Answer: He cut her pinky

The only unprotected part of Thaegan was the pinky she did magic with. Kree couldn't stab her through the heart because Thaegan was protected by spells. I got the part about eating out the liver from a Greek myth about Prometheus giving fire to the humans and as punishment, Prometheus was chained to a mountain where an eagle ate out his liver every day.
