Quiz Answer Key and Fun Facts
1. If I mix soft cheese, cream and eggs and spread the mixture on a digestive biscuit (or graham cracker) base, what creamy dessert have I made?

Answer: Cheesecake

Dreamy, creamy and just a little indulgent - that's cheesecake! A Greek man called Athenaeus wrote a basic recipe in 230AD, where cheese was pounded and mixed in a pan with honey and flour. You can eat cheesecake hot or cold, making it a truly versatile dessert for any occasion. Topping the cheesecake with fresh fruit can also add an extra dimension to the dish.
2. Crepes, a French delicacy, are lovely with orange syrup or fresh fruit. What are crepes?

Answer: Thin pancakes

Crepes are thin pancakes and their size really depends on how big the frying pan used to cook them is! I quite like maple syrup or lemon and sugar as fillings myself. Some adults enjoy Crepes Suzette - they are doused in Grand Marnier, which is an orange liqueur, and can be set on fire. This is really impressive to see at a restaurant!
3. What delicious dessert is made of ice cream with whipped cream, a sweet sauce and a cherry on top? It sounds like a day of the week.

Answer: Sundae

A sundae on Sunday, wouldn't that be grand? The humble sundae's origins are contested, although it is believed to be of US origin and was first made in the late 1800s. Any flavour of ice cream can be used, in addition to a myriad of toppings and extras including brownies, bananas, caramel, strawberries, chocolate, and whichever other topping takes one's fancy.
4. Baklava is made with lots of lovely layers of filo pastry and a nutty filling. Which of these natural ingredients can I use in a syrup to sweeten my baklava?

Answer: Honey

Honey is a very impressive food made by bees - it can keep for a very, very long time indeed! It is even sweeter than sugar and is perfect for making my baklava sweet and delicious. Baklava's many layers of filo pastry are brushed with butter in the layering process, and a nutty filling of (often) pistachios and walnuts is added partway through. Once fully layered it is baked for about fifty minutes until golden and crisp.

The honey syrup is made by simmering honey with sugar, water, lemon juice and optionally other flavourings, and added to the freshly cooked baklava. Yum.
5. Which tempting dessert is made of a sponge cake base layer, a fruity middle layer and a custard layer with whipped cream on top?

Answer: Trifle

A trifle is a whimsical treat that is bright and colourful and lights up a table. Everyone can take as big or as small a portion as they may desire. At its base, the sponge layer soaks up the fruity juices whilst keeping a firm texture. The middle fruity layer is rich and is often made of strawberries or raspberries. Pineapple pieces can also be used to give the dish a tropical tang. Finally, the custard (and cream) layer adds a nice dairy contrast to the tangy fruity tastes.
6. I want to make a sweet strudel, a wholesome pie and a warm cobbler. What fruit should I use? Apparently, one a day keeps the doctor away!

Answer: Apple

Apple strudel is a German delicacy which encases a sweet apple filling in layers of crispy strudel pastry. Another popular dessert, apple pie, is a heart-warming dish where an apple filling is placed in a thick pastry shell. Meanwhile, making apple cobbler involves covering an apple filling with a cake-like batter and then baking in the oven.

A personal favourite of mine I didn't put in the question was apple crumble topped with double cream or ice cream - yum!
7. Ice cream is very refreshing on a hot summer's day. What orchid-derived flavouring could I use to make the most popular kind of ice cream?

Answer: Vanilla

According to several polls and sales figures, vanilla ice cream is the most purchased and most popular in America and the UK. It brings out another dimension to the smooth, cool and refreshing ice cream it flavours. Vanilla comes from the orchid, which is a plant grown in tropical countries like Mexico, Madagascar and the Caribbean. Be sure to use 'vanilla extract' and not 'vanilla flavouring' if you want to taste the real deal when using it in your own recipes!
8. Plum pudding is very rich and fruity with treacle, raisins and sultanas abound - perfect to combat the winter blues! On which festive holiday would I be most likely to eat plum pudding?

Answer: Christmas

Plum pudding is another name for Christmas pudding and is almost exclusively only ever eaten around Christmas time. This pudding was originally conceived in mediaeval times and has truly survived the test of time. It is very dense and bulked out with flour, suet and breadcrumbs. Raisins, currants and sultanas are also often used to pack out the pudding and give it a rich and dark taste.

Whilst I like my Christmas pudding, I'm usually far too full after a large Christmas dinner to eat much of it!
9. Another summery dessert has taken my fancy. It is made of meringue and is topped with delicious fresh fruit like strawberries. What dessert named after a Russian ballet dancer am I thinking of eating now?

Answer: Pavlova

The pavlova's namesake, Anna Pavlova, was a ballet dancer. Like her, the pavlova dessert is rather light and elegant. The meringue that forms the bulk of a pavlova is made primarily of beaten egg whites with sugar whisked in. A little cornflour and vinegar are often added too - these help keep the meringue from being as easily overcooked and over beaten.

After being cooked in the oven, chopped fruit and whipped cream can be added to complete the delicious dish.
10. Certain types of puddings, cakes, fondants, brownies, ice-creams, mousses and profiteroles can all taste better with a certain addition. Made by processing the cacao tree's beans, what indulgent ingredient could go with all of the above desserts and more?

Answer: Chocolate

Chocolate goes well with all kinds of desserts - it can add an irresistible depth to them and even tastes good by itself! It is made from cocoa solids and butter extracted from cacao beans. Chocolate is packed full of energy, which is part of what makes it so desirable.

It is also associated with the feeling of falling in love, brought about perhaps through the pleasure of experiencing its smell, sight and taste, or the effects of its chemical phenylethylamine on the brain.
