Answer: Cuthbert Binns

Cuthbert Binns was the History of Magic teacher for the entirety of Harry's time at Hogwarts, and is assumed to have been the teacher for some considerable time given that he just carried on in the post when he died. History of Magic is generally regarded by most students as one of the most boring subjects taught at Hogwarts, but that doesn't stop Hermione from excelling in it.
2. Sometimes referred to as 'Your Headship' or 'Professorhead' by the poltergeist Peeves

Answer: Albus Dumbledore

Albus Dumbledore was the Headmaster of Hogwarts when Harry arrives for his first year of study. Having previously taught Transfiguration at the school, Dumbledore became a very long-serving and well respected member of staff. He also held non-academic positions such as the Chief Warlock of the Wizengamot, a wizard high court.
3. Produced a set of winged keys to help protect the Philosopher's Stone

Answer: Filius Flitwick

Filius Flitwick was the Professor of Charms whilst Harry Potter was at Hogwarts. He is well-liked by students for having a more friendly, laid back approach that some of the other staff (such as Professor McGonagall!). In 'Harry Potter and the Philosopher's Stone', Flitwick enchants a huge number of winged keys to help protect the Philosopher's Stone, just one of many layers of protection provided by various staff members.

When setting a test for Harry and his peers, Lockhart included a question that asked for his favourite colour (lilac), something that Hermione happens to know.

After Lily and James Potter are killed by Voldemort, Albus Dumbledore decided to send Harry to live with his (muggle) aunt and uncle, the Dursleys. Minerva McGonagall, Professor of Transfiguration at Hogwarts and member of the Order of the Phoenix, spent a day observing the Dursleys and decided that they are horrible people.

Despite her protestations, Dumbledore insists that a life with the Dursleys is best for Harry, and he lived with them for the first 11 years of his life.

Answer: Horace Slughorn

Horace Slughorn was the Potions Master at Hogwarts for many years before the arrival of Severus Snape. In 'Harry Potter and the Half-Blood Prince', Harry and Dumbledore go to the village of Budleigh Babberton to find Slughorn and convince him to return to the position. Slughorn is known for his 'Slug Club', a collection of students he finds noteworthy and for which he holds multiple parties at Hogwarts.

Answer: Sybill Trelawney

Sybill Trelawney was the Professor of Divination at Hogwarts when Harry and his friends first take up the subject. In 'Harry Potter and the Order of the Phoenix', Professor Umbridge attempts to dismiss Trelawney from Hogwarts, a fate she only escapes thanks to Dumbledore's pardon after a rather public scene. Centaurs are well known to be possessed with the skills of divination, thus making Firenze a good choice as her would-be replacement.

Pomona Sprout was the Professor of Herbology for the whole time that Harry is at Hogwarts. She is an expert with plants, and the mandrakes that she grows are used to remedy those that have been petrified by the basilisk in 'Harry Potter and the Chamber of Secrets'.

Answer: Severus Snape

Snape was at school with both of Harry's parents, before becoming Potions Master at Hogwarts. His experiences with James Potter meant that he was particularly hard on Harry, and his allegiance appeared to be with Lord Voldemort.
