Quiz Answer Key and Fun Facts
1. This Southern gravy, Red-eye gravy, is composed mainly of the following:

Answer: strong black coffee and ham drippings

This gravy is very basic, although there are some variations. Usually, strong coffee is blended with ham drippings, although it may be built upon. Other fats may be added, as well as sugars or thickeners.
2. You are having a dinner party, and you have decided to serve Cornish Game Hen as the main dish (with only a light appetizer and dessert as other courses). You are expecting 12 guests. About how many hens will you need to buy for your guests?

Answer: 12 hens

Cornish hens are really small, and you would ideally cook one per person. They usually weigh between one and two pounds, although the average is a little over one pound.
3. Mirepoix, the basis of many sauces and dishes, is composed most often of the following:

Answer: carrots, onions, and celery

These basic ingredients lend a great deal of flavor to many dishes, utilizing the contrast of the flavors of the three.
4. Which of these is an extraordinary type of beef?

Answer: Wagyu beef

Wagyu beef is an extremely expensive delicacy, and is Japanese in origin. This is also called Kobe beef by many. The meat is exceptionally tender, with extensive marbling. Cook it quickly, as you would for a rare tuna steak. Cover with foil for 3 or 4 minutes after cooking to seal in juices.
5. Which of the following is the safest food for a 6 month-old infant who is ready for solids besides her usual baby cereal?

Answer: store-bought jars of pureed first foods

Jarred baby food is much safer than any of the other choices. There are nitrates, which are unsafe for an infant, in carrots, spinach and other leafy greens, beets and turnips. Store-bought versions of these baby foods are generally not high in nitrates, though home-blended purees are.

A baby also cannot have egg whites, due to potential allergies, or honey, due to botulism spores. Corn syrup is not safe either, as the baby cannot tolerate the spores till she is over 1.
6. Mahi-Mahi is Dolphin meat:

Answer: False

Mahi-Mahi is the meat of the Dolphinfish, not the MAMMAL Dolphin. It has a nice, firm texture and is white in color. Give it a try!
7. What makes goose or duck liver "foie gras"?

Answer: A funnel with a long tube is put down the bird's throat, and a grinder within the funnel pushes ground corn into its stomach

Foie gras is a delicacy, and is pretty expensive. For a lower budget, mousses and such can be purchased.
8. Durian is notorious for:

Answer: its offensive odor

These fruits are the Limburger cheese of fruits, although they are tasty, starchy and versatile. They are even banned from certain places, like taxis, because of the odor!
9. Marmite is:

Answer: a condensed yeast-based product

This stuff is SALTY. Use in small amounts on buttered toast or bread.
10. If you have an upset stomach, what would most likely ease your discomfort?

Answer: ginger powder, fennel, and honey steeped in water

Ginger is well-known for settling the stomach, as is fennel. There are products on the market that utilize these ingredients, especially for infants.
