Quiz Answer Key and Fun Facts
1. Team player Holkham16 is from the UK. Once popular in the Midlands and more northern counties of Britain, this meatball shaped item was traditionally made from pig's heart, liver and belly meat, with added breadcrumbs and seasoning. They are often served with gravy, mashed potato and mushy peas. What dish is she describing?

Answer: Faggots

Faggots were a common foodstuff in the Midlands and northerly counties of Britain particularly during times of food rationing. Several faggots made up the meat element of a meal along with vegetables and gravy. They are still available from certain butchers and markets and can be found in some parts of Britain as a frozen item in gravy ready to cook.

In some areas of Britain they are also known as 'Savoury Ducks'. Possibly due to the high offal content, and also their rather unbecoming name, these tasty items have declined in popularity since the 1960s.
2. Team leader redwaldo loves to cook Indian curries. His favorite dishes include lamb vindaloo, beef Madras and vegetable masala. One key ingredient of all these curries is a combination of herbs and spices that includes cinnamon, peppercorns, coriander and cumin. What is this spice combination called?

Answer: Garam Masala

Garam means intense and masala is a mixture. Such a combination of spices is used in many dishes such as chicken, beef and fish. For full flavor,I suggest using a mortar and pestle to grind the spices.
3. This shellfish is a favorite of elvislennon and is found in shallow water especially around the lower North Island of New Zealand. It can be tough if not prepared properly. The best way to eat it is sliced into thin strips and fried with onions and cream. What is it?

Answer: Paua

Pauas are a rare delicacy. It is illegal to sell them commercially. They can only be harvested in certain areas, and there are strict rules on quantities and size. The interior of the Paua shell is brightly hued, with colours ranging from deep red to turquoise. They can commonly be seen serving as ash trays in many Kiwi homes.
4. One of teammate iCaramba's favorite things about living in multi-cultural Los Angeles is the rich variety of ethnic restaurants and food stands. The people from which country have helped make the "pupusa" an L.A. staple food?

Answer: El Salvador

The pupusa, a national dish of El Salvador, consists of a thick corn tortilla filled with cheese and other ingredients, including beans, pork, and 'loroco' (unopened flower buds), with a scoop of 'curtido' (fermented cabbage slaw) on the side. With approximately 300,000 Salvadoran-born immigrants living in Los Angeles, it is no surprise that pupusa restaurants, or 'pupuserías', can be found all over the city.
5. Western Australian Tezza1551 always looks forward to the season when a particular bush tucker food is plentiful. This small red fruit is delicious fresh or in jam or pies. What is she eating ?

Answer: Quandongs

Quandongs are small red fruit about the size of a cherry, with a large stone that can be used for jewellery or crushed to yield oil that has medicinal uses.
Other parts of the plant also have medicinal functions.
Quandongs are sometimes called wild peaches, and are found over most of southern Australia.
They have a higher Vitamin C content than oranges and Quandong jam is yummy !
Of the choices given, quandongs are the only choice found in my part of Australia.
6. Having a partner who was raised in Holland it's no surprise that cheese is always available at casey317's place. Of the four listed cheeses, which one is recognised as a Dutch cheese?

Answer: Leyden

Leyden cheese is named after the Dutch city of Leiden. It is similar to Gouda cheese but always has cumin or caraway seeds mixed into the curd. My father-in- law called it 'groene kaas' or green cheese.
Abertam is a sheeps milk cheese from the Czech Republic, Stilton an English cow milk cheese (I love the 'blue') and Brie is one of the best known French soft cows milk cheeses.
7. Player rockinsteve lives close to Chicago, and wonders if you know which of these condiments or foods is looked upon as NOT appropriate on a Chicago-style hot dog?

Answer: Ketchup

Many Chicago people hate putting ketchup on hot dogs, and I, a native of Chicago, agree with that.
8. Rocker team mate psb1969 loves to go fishing, When he brings some fish home, his favorite method of cooking them involves coating the fish in a mixture of alcohol and flour before frying. Which well known batter is he using?

Answer: Beer batter

This simple recipe is well known in Australia. It only involves a can of beer(cold) and some plain flour. It makes a great crispy coating for most types of fish in minutes.
9. As a child, Wyambezi watched her parents cook breakfast together. Her father would occasionally fix "pudding", a food he brought home from butchering day at the Pennsylvania family farm. What is "pudding" in this context?

Answer: Scrapple

Scrapple is a Pennsylvania Dutch food common to the Mid-Atlantic states. It's primarily a combination of pork scraps, flour and spices, thinly sliced and pan fried until crispy. It's tasty but I quit eating it once I was old enough to know what is in it and how it's prepared. Scrapple will never be considered a healthful food.
10. Gloriabrazil tells us that in Brazil, a famous bread is served at most restaurants and bars as an appetizer. The recipe calls for manioc starch, rather than wheat flour. These rolls would be made with a mild, white cheese similar to Muenster in texture - but quite different in taste. They are addictive. Which of the following is our Cheese bread?

Answer: Pão de queijo

The food of Brazil is a combination of many different cultural inheritances that have mixed and created our unique cuisine. Originally, such food was created by the native indigenous peoples.
When the Portuguese colonized Brazil, their gastronomy mixed with the traditional indigenous dishes. Later, during the times of slavery, Africans brought their gastronomy to Brazil.
Many other immigrants arrived in Brazil, such as Germans, Italians, Japanese, Spanish and French.
But we have some specialities, like Cheese bread that we created here. These rolls are best consumed while warm, directly from the oven.
