Pearle B. Wait was a carpenter and cough medicine manufacturer. He lived in LeRoy, New York. The first flavors of JELL-OŽ he developed were strawberry, raspberry, orange and lemon. In 1899, he sold the business to his neighbor Orator Francis Woodward for $450.

Chocolate gelatin was first offered in 1904, but was discontinued in 1927. Finally, in 1934, JELL-OŽ found a way to make the chocolate flavor appealing by marketing it as Walter Baker's Dessert. It was renamed JELL-OŽ Chocolate Pudding in 1936.
