Answer: Most of the fruit shows signs of decaying.

Although some art historians suggest that Caravaggio simply painted what he had available, the usual explanation for the less than perfect state of the fruit is that it is a metaphor for the decaying in life. The painting is not a tempera but an oil.

He did so because a fresco can't be modified later, while Leonardo was used to working slowly, and modifying his works often. The yet untested technique adopted by Leonardo was the main cause of the quick deterioration of the painting.
