2. Which of the following dishes does NOT include rice as a key ingredient?

Answer: Bubble and Squeak

Paella (Spanish), Risotto (Italian) and Biryani (Indian) are all dishes of which rice is an integral ingredient, served with the appropriate mixture of meat, vegetables, spices, sauces and other flavourings. Bubble and Squeak is a traditional English concoction of which potatoes and cabbage are the main ingredients.

These are shallow-fried with whatever other leftover vegetables the cook finds at the back of the fridge, and traditionally served with cold meat left over from the week's Sunday roast.

3. What cooking term, that literally means "to the tooth" describes pasta that is firm, yet still tender to the bite?

Answer: al dente

When pasta is cooked al dente, there should still be a slight resistance to the center when bitten. Al forno refers to food that has been baked in an oven. A la carte means "from the menu" and and is used when items on the menu are priced individually, rather than as composed plates. A la mode refers to pie served with a scoop of ice cream.

5. Your corned beef brisket comes without the usual packet of spices with which to slow-cook it. Traditionally, which of the following spices ought you NOT add to the simmering liquid?

Answer: chili powder

A complete mixture of spices with which to produce the perfect corned beef might well include, in addition to peppercorns, bay leaf and mustard seeds: allspice berries, cinnamon stick, juniper berries, whole cloves, ginger, coriander seeds, crushed cardamom pods, nutmeg, mace and star anise. Chili powder, which is a mixture of ground chilis, garlic powder, ground cumin and ground Mexican oregano, is not a component of traditional corned beef ... although it might make an interesting variation.

6. When should the aeration system in a home freshwater aquarium be used?

Answer: 24 hours a day, every day

Fish breathe oxygen from the water through their gills, and water absorbs oxygen from the air. Aeration, through pumps and air stones, assures the exchange of gases between the water in the tank and the atmosphere. It also helps dissipate the carbon dioxide and balance the water temperature.

The movement simulates the water flow in the fishes' natural habitat, and makes the tank look more alive.

7. What type of drink is chicha, that can be alcoholic or non-alcoholic and is common throughout Central and South America?

Answer: Corn beer

The origin of the word chicha is disputed but usually translates to "fermented water". The alcohol content is usually mild, around 2 or 3 percent and there are many variations depending on which country you are in. The non-alcoholic version is called chicha morada and is made from purple corn, giving it a deep purple colour. Sugar and lemon are added so it is sweeter and served as a refreshment.
