Quiz Answer Key and Fun Facts
1. Bacon can come from a variety of animals but it is typically from the pork belly of which animal?

Answer: Pig

Bacon is a type of salt-cured pork typically from the pork belly of pigs. It is a popular side item for breakfast dishes and added to other dishes such as a BLT (bacon, lettuce, tomato sandwich). Little strips or cubes of bacon can be added to dishes to add flavor. Meat from other animals can be prepared like bacon, such as turkey bacon, as well as from beef, lamb, chicken and goat.
2. Historically and before the widespread use of refrigeration, why was the practice of curing pork necessary?

Answer: To preserve the meat

Curing is any type of food preservation or food flavoring process. With regard to bacon, curing happens through the process of injecting it with brine (water with a high concentration of salt). Historically this was done by necessity to preserve the meat safely over a long period of time.

However, once refrigerators became popular and widely used, the process was no longer necessary. Curing was still popular from a flavor standpoint and bacon continued to be cured.
3. I'm not actually sure that everything tastes better with bacon, like baconnaise for example. What is this?

Answer: Bacon flavored mayonnaise

Bacon started to become really popular in the United States and Canada after 2011 and the flavor of bacon has been added to all kinds of items, including chocolate, toothpaste and mayonnaise. There are all kinds of novelty bacon related items available for those who want all bacon all the time.

Other examples include bacon ice cream, bacon bubble gum, bacon band-aids, bacon air fresheners and bacon flavored donuts.
4. The cookbook "Everything Tastes Better with Bacon: 70 Fabulous Recipes for Every Meal of the Day" was written by which author and food commentator?

Answer: Sara Perry

The book was published in 2002 in the USA and followed by a French language version in 2004. The recipe book included a description of the various types of bacon as well as storage methods. It included all sorts of bacon-related dishes, from sides, to appetizers, to desserts.

There is a recipe for a pie crust and a filling for fruit crisp that includes bacon. And of course there are breakfast recipes. The book was positively received and, according to "The Chicago Tribune", sold 30,000 copies in its first month. If you like the idea of a recipe book devoted to a single item, you might like other Sara Perry books, including "The New Complete Coffee Book" or "The New Tea Book".
5. How is bacon different in Japan than in the USA?

Answer: It is not typically sold raw.

Bacon in Japan is still cured pork belly meat and is typically sold in full length or half length slices. However, it is usually sold processed and precooked. When cooked it has more of a ham like quality.

In Germany small bacon cubes are a popular addition to dishes and in Canada maple syrup is a popular ingredient used for curing bacon. Personally I'm not a fan of the maple flavored bacon but it's quite popular.
6. Bacon may taste great but it's not always great for your health. All of these are related to consumption of eating processed meats EXCEPT which one?

Answer: Cataracts

As delicious as bacon is for breakfast, it really should be consumed in moderation. Any processed, high fat meat is going to contribute to health issues and bacon is no exception. Another risk with bacon is that bacon can contain nitrates, which can be carcinogenic. In the US, there is a limit on the amount of nitrates allowed in bacon and vitamin C can be added as a way to reduce the formation of carcinogenic nitrosamines.

Cataracts develop typically from either aging or injury. I couldn't find any studies that link the consumption of bacon to the development of cataracts. Chalk that a win for bacon.
7. Is there a vegetarian alternative to bacon?

Answer: Yes

There is a vegetarian bacon option but why would you eat it? It's typically a soy based product, has no cholesterol, is low in fat and high in protein and fiber. Compare that to a slice of cooked side bacon which contains about 4.5 grams of fat and it then becomes a not so bad option. Veggie bacon has some pretty fun names like vacon and facon.
8. If bacon isn't cooked properly, you could meet this nasty little parasite that sounds like it might like Halloween. Can you name it?

Answer: Trichinella

Trichinella are a parasitic roundworm that can cause some uncomfortable problems during initial infection that include diarrhea, abdominal pain and vomiting. After about a week, the larvae migrate to muscles and cause all sorts of problems including inflammation of the face and the whites of the eyes, rash, fever and muscle pains. Worldwide about 10,000 infections occur every year and most cases are from eating undercooked meat. Fortunately, the risk of death is low.

It can infect wild animals including swine and so it's important to cook pork meat properly before consuming it.
9. Bacon is one food typically included in a full English breakfast, which can also include eggs, sausage, toast, tomatoes, mushrooms, baked beans and black pudding. What is black pudding also known as?

Answer: Blood pudding

Blood or black pudding is made with pork blood, pork fat or beef suet and a type of cereal (usually oats). It is one of the oldest types of sausages and is particularly popular in the North West region of England, a region known as Black Country (West Midlands) and Scotland.

It can be baked, fried, boiled or grilled and in addition to being included in a good old English breakfast, is popularly thrown! Annually in Ramsbottom, UK, there is a World Black Pudding Throwing Championship where the goal is to knock over Yorkshire puddings by throwing Black puddings at them.
10. Priscilla Renea released a song in 2009 with a breakfast food title that starts like this: "I know that you love me more than ever And baby I promise I'll be better No I won't keep making you feel like I don't care at all Cause I'll do whatever it takes to keep a smile on your face Even if that means makin' you _____________" Can you guess what she's makin'?

Answer: Bacon 'n' eggs

Priscilla Renea has co-written songs for some well known artists. Some of these songs are "Fix a Heart" by Demi Lovato, "Timber" by Pitbull, "Love So Soft" by Kelly Clarkson and "California King Bed" by Rihanna. In 2009 she released her own album called "Jukebox" and this album included the song "Bacon 'n' Eggs'. Bacon and eggs aren't the only breakfast food items being used to make her man happy in this song, she also sings about grits, OJ, blueberry muffins and jam and bread.
