Answer: mustard, chili, slaw, and onions

Served best on a hot dog. Also works well with a hamburger.

Answer: BBQ slaw

Served as a side dish with BBQ. Can also be served on hot dogs and BBQ sandwiches.

Answer: Slowly over hickory wood

The hickory gives the best flavor for BBQ, and cooking the meat slowly seals in the juices.
4. What does the term "par-boiling" mean?

Answer: Partially boiling food prior to the final cooking

Certain foods must be par-boiled prior to cooking. Collard greens and squirrel (yes squirrel) should be brought to a fast boil, then drained before cooking. For collards the par-boiling takes out bitterness. It takes the toughness out of squirrel.
5. What is 'dirty rice'?

Answer: Rice with cajun seasoning and sausage

You want to boil the rice in chicken broth, some hot sauce, and cajun seasoning. When fully cooked add crumbled, cooked sausage. Makes a delicious side dish.
6. What is Calabash shrimp?

Answer: Tiny fried shrimp

Dipped in egg, then rolled in flour with salt and pepper the shrimp are then deep fried for about 3 minutes. Named for Calabash, NC.
7. What nut would I use to make a rich pie?

Answer: Pecan

Made with butter, dark syrup, and pecans, pecan pie is a delightful dessert.
8. What are 'taters and onions'?

Answer: Potatoes and onions fried in bacon grease

'Taters and onions' makes a wonderful side dish at any meal. They are best slow fried in an iron skillet so the potatoes fall apart.

Native Americans call this dish 'chicken and pastry', while folks of European descent call it chicken and dumplings. Native Americans consider chicken and dumplings to be stewed chicken with cornmeal dumplings.

Answer: no

Seasoning the canned vegetables and then slow cooking them makes them taste so much better. For example, season canned green beans with ham or smoked turkey and slow cook them. Enjoy!
