Quiz Answer Key and Fun Facts
1. What smoked food is added to a bagel smothered in cream cheese to make a traditional sandwich and perfect picnic food?

Answer: Salmon

Salmon fillets are smoked and most often sliced very thinly. Add a drizzle of freshly squeezed lemon juice and you are good to go.

My birthday treat for many years has been scrambled eggs on buttered, thick wholemeal toast and topped with smoked salmon.

Tip: Do NOT tell children that it is essentially raw fish, if you want them to eat it. If you want to eat it all yourself, then do tell them!
2. Which of the following choices of cheese is NOT commonly available in both a smoked and plain version?

Answer: Cream

If you look hard enough, you can find a smoked version of most cheeses.

Researching for the answer to this question sent me off around the world and I was intrigued to find references to both smoked Mozzarella and Feta cheeses.
3. Pit roasting uses the resulting smoke as part of the cooking process. Which of the following foods would be best pit roasted?

Answer: A whole pig

Basically, to pit roast a pig, you dig a pig sized hole in the ground and line it with stones. Cover the bottom of the lined hole with charcoal and light it. Place the pig in the hole above the heat. Cover the hole.
4. Which of the following is a NOT a traditional Scottish smoked dish?

Answer: Haggis

Haggis is made from minced heart, lungs and liver of a sheep with oatmeal and various vegetables and rolled into a fat sausage shape.

According to folklore, it is a small, furry creature with its front legs half the length of its back legs to enable it to run up the Scottish Bens! (In some versions, it is the left legs that are shorter!)
5. Which tea is traditionally dried over a smoking fire to speed up the drying process?

Answer: Lapsang souchong

Lapsang souchong tea was first grown on Mount Wuyi, Fujian Province, China. The reason for drying the tea over a fire was to make supplies quick enough to cover demand when the drying season was delayed due to armies passing through the area.
6. I did not want to save this question till last: Some research would seem to suggest that some smoked foods contain polycyclic aromatic hydrocarbons (PAHs), which are known carcinogens. What should your sensible reaction be?

Answer: Eat smoked foods only in moderation

A Hungarian study following the residents of an area where most of their protein intake was smoked foods raised the alarm. Other research so far has not produced similar results. Research continues and in the meantime, moderation in all things is a good rule to live by.
7. Barley is soaked in water for several days and then dried in a kiln which is at least partly fired with peat. These are the first stages in producing which beverage?

Answer: Single Malt Scotch whisky

The production of whisky in Scotland is covered by strict legislation. One rule is that Single Malt has to be aged for at least three years in oak barrels.
8. What is the name of the Chinese meat product that is beef, pork or mutton covered with sugar, salt, soy and spices and dry cured before being cut into squares?

Answer: Bakkwa

Bakkwa is a centuries old dish and the recipe has remained the same over the years. A less sweet and softer version called shafu bakkwa is a more recent and slightly healthier option.
9. Which vegetarian staple is produced in various consistencies with the hardest one sold in both plain and smoked versions?

Answer: Tofu

Tofu is sold in blocks that can be cut and used in recipes. You can also buy smoked soya beans, but only after they are processed into strips similar to jerky.
10. Bacon is traditionally pig meat that is treated with salt to produce "green" bacon. It can then be smoked. Which of the following is NOT a cut of bacon?

Answer: Top

Other cuts of bacon include cottage, jowl and hock.

My preferred way to eat bacon is three or four slices of fried middle bacon between two slices of buttered, soft white bread.
