1. Who, in beginning the story of the adventure, delivers the line, "It began long ago in a land far away to the east."?

Answer: Bilbo

The beginning of the movie finds Bilbo on the morning of his 111th birthday party. His internal ramblings (largely a one-sided conversation with Frodo) serve as an opening narration. He decides that it is time to tell Frodo what really happened and writes the above line (whilst speaking), the first words of his book, "An Unexpected Journey".
The older version of Bilbo is played by Ian Holm.
2. Bilbo's reminiscences and writing take him back to a time 60 years ago. From whom does he hear the words "I am looking for someone to share in an adventure."?

Answer: Gandalf

As we travel back in time with Bilbo, we find him sitting in front of his house blowing smoke rings. Gandalf approaches and, after some amusing conversation surrounding Bilbo wishing Gandalf a good day, they talk about having known each other before. Trying to stay polite, Bilbo finally asks Gandalf what he wants and Gandalf replies with the above line. Bilbo is adamant that he wants no part of any adventure.
Gandalf is played by Ian McKellen.
3. In regards to all the dwarves, who makes the observation that, "They're quite a merry gathering, once you get used to them."?

Answer: Gandalf

Overwhelmed by the boisterous behaviour of the dwarves who descended uninvited (at least by him), Bilbo complains to Gandalf, who replies with the above line. Although seeming disrespectful of all of Bilbo's things, the dwarves leave everything clean and in perfect condition, except for his larder which they pretty much emptied.

Bilbo has been asked to join the party for two reasons, to change their number from the unlucky 13 at which it stands, and to serve as a burglar. Charged with finding a burglar, Gandalf choose Bilbo. Thorin is less than impressed with Bilbo as his burglar and has no problem in telling Gandalf this, in front of Bilbo.
Thorin is played by Richard Armitage (who is actually over 6'2").

When Bilbo tells Gandalf that he cannot be a burglar, Gandalf reminds him of the exploits of his Great, Great, Great, Great Uncle Bullroarer Took, who had apparently been large enough to ride a horse and not a pony. In battle, said Took had beheaded the goblin king by hitting him with a club. The king's head then allegedly fell down a rabbit hole.
Bilbo accuses Gandalf of making that up but all Gandalf will admit to is some embellishment.

The morning after his unexpected party, Bilbo wakes to find his Hobbit hole restored and empty. He picks up the contract he had refused to sign the night before and finds that he wants to go on the adventure after all. Throwing a few things together, he sets out at a run, across fields and fences, to catch up with the party.

When he catches up with the group he waves the contract and announces that he has signed it. Thorin accepts him into the party with the above words.

Making camp for the night, Bilbo is worried by some disturbing noises. He asks the younger dwarves if the noises are made by wolves, but the younger dwarves say no, they are made by orcs. They have a bit of fun with Bilbo's obvious fear but Thorin, seeing no humour in the situation, steps in to stop them.

Prompted by Thorin's outburst about orcs, Balin explains to Bilbo how Thorin's family had a long history of problems with one particular orc band, lead by a large, white orc named Azog. Azog had killed both Thorin's father and grandfather and had come after Thorin. But Thorin, with only an oak branch for protection, had cut off Azog's arm. Azog he had been taken away by his followers.
Balin is played by Ken Stott.

Radagast the Brown is distressed to find many of his woodland friends poisoned. He works very hard to try to save a hedgehog name Sebastian, who is a favourite of his. He speaks the above line to himself, when the regular cures do not seem to have any effect on what ails Sebastian, whom he does manage to revive.
Radagast is played by Sylvester McCoy.

Answer: Bilbo

The trolls have captured the party and have them either bound in sacks or turning on a spit over the fire. From their conversation, Bilbo understands that they need to be done before the dawn or they will be turned to stone. He offers bits of advice about how to prepare the dwarves, hoping to delay the trolls. He hits upon the idea of declaring the dwarves infested with parasites, an idea that initially offends them until they realize what Bilbo is doing.
The younger version of Bilbo is played by Martin Freeman.
