Answer: his heart is where his liver should be

The quote is actually "Lucky his heart is where his liver should be or he'd be dead now", from the episode "A Private Little War" in season two. Spock is shot in the chest with one of the rifles sold to the population of the planet by... by... well if you don't know that, you haven't watched nearly enough 'Star Trek'.
2. What is a Horta?

Answer: a peaceful silicon-based lifeform that feeds on rocks

The episode is "Devil in the Dark" from series one. The Horta is a silicon based lifeform that lives on mining planet Janus VI and terrifies the miners by attacking them and... melting them into a heap of smoking goo. Kirk and his lot beam down, have a nosey and with the help of Spock's mind-meld strategy, work out that the Horta is attacking people because they are destroying its eggs during their mining.

The episode ends with the crew of the Enterprise again managing to find a win-win situation for all parties.

The Horta digs the tunnels, the miners mine, and everyone respects the other's space.
3. What do you call a speed lower than warp 1?

Answer: impulse

Voyager's usual speeds are factors of impulse or warp speed.
4. Why was Kirk embarrassed about beaming down to a planet with one of the female members of his crew in "Dagger of the Mind"?

Answer: he got off with her at the Christmas party

We never find out exactly what happened in this first season episode, but we can surmise from the characters' comments that there may have been something more than friendship or professional discussion occurring between Kirk and "Dr. Noel" at the Christmas party.

After telling Spock to tell McCoy she had better be the best assistant he ever had, Kirk huffily gets back onto the transporter and beams down to the planet with her. Later in the episode, Kirk gets stuck in the brain-washing machine and brain-washed into thinking he is madly in love with Dr. Noel, and the Christmas party happens all over again while they are trying to escape. Spock isn't impressed.
5. In the episode "By any other Name" in which four aliens in newly adopted human bodies take over the ship, Kirk manages to distract one by seducing her, Spock antagonises her lover and McCoy injects a third with stimulants. What does Scotty do to incapacitate his alien?

Answer: he gets him drunk

Well what do you think? This is Scotty we're talking about! Unfortunately for Mister Scott, he feels the need to accompany the alien as it gets bladdered, and he ends up sliding down a wall in his quarters before he can get the alien's belt to the captain. This doesn't affect the overall outcome of the episode though, and the aliens are well and truly defeated.
6. How do the Organians prevent the Klingons and the Federation from fighting in "Errand of Mercy"?

Answer: they raise the temperature of all weapons so they are impossible to use

In this (very amusing) series one episode, Kirk and Spock beam down to Organia, on a mission to convince the Organians to accept Federation help against the Klingons. When the reticent Organians put them off too long and Klingons take over the planet, Kirk and Spock take on the whole Klingon army to prevent them tyrannising the population of the planet.

When it comes down to it though, and the two heroes manage to take the Klingon commander prisoner with two entire fleets in orbit waiting on orders to nuke each other into oblivion, they are unable to fight.

The Organians have overheated all their weapons. After some blustering about "proper channels", Kirk realises this actually makes sense, and goes back to the Enterprise with his tail between his legs.
7. What is special about Elaan's necklace in "Elaan of Troyius"?

Answer: it's made of dilithium crystals

This is from the third season. The women of Elas have the power to make a man fall madly in love with them for life just by touching him with their tears. This is the fate that awaits Captain Kirk during one of his many tempestuous meetings with the Dohlman of Elas.

But the necklace that was given Elaan as a wedding gift turns out to be made of dilithium crystals at a crucial moment when the fate of the Enterprise hangs in the balance. Scotty and Spock manage to use the crystals to get the engines running in time to fend off an attack by the Klingons.
8. How is a Klingon plot to take over a planet foiled by the "multiplicative proclivities" of small, furry creatures?

Answer: the Klingons had poisoned the grain and the Tribbles revealed this by eating the grain and dying

This is (obviously) from the episode "The Trouble with Tribbles" in series 2. This comic episode shows a disgruntled Kirk having to guard a shipment of "Quadrotriticale" (I had to look that one up) because this is the seed by which the Federation can show that they will make better use of a disputed planet than the Klingons could.

The Klingons, meanwhile, have sneaked onto the starbase and poisoned the grain. The Tribbles, who breed like rabbits only faster (they are actually born pregnant), manage to get into the stock of grain and eat it. What appeared to be an utter disaster (one conjures up the image of Captain Kirk up to his chest in balls of fur), turns out to be a lucky escape.

The Tribbles have foiled the Klingons' plan. For their pains, Scotty beams "the whole kit and caboodle" into the Klingons' engine room, much to everyone's hilarity.
9. Who says "Commander, your attire is not only appropriate. It should actually stimulate our conversation", and in what context?

Answer: Spock when trying to seduce the Romulan commander in "Enterprise Incident"

This is the episode in which Kirk and Spock deliberately enter the neutral zone between the Federation and the Romulan Empire in order to steal the Romulans' cloaking device. Spock distracts the Romulan ship's commander whilst Kirk steals the device (in an unusual swapping of roles).

When the Romulan discovers Spock's betrayal, she challenges him: "Why would you do this to me? What are you that you could do this?" to which he replies: "First Officer of the Enterprise." The Romulans are the enemy after all.

But as the episode draws to a close, his words to her could lead us to wonder whether he really did like the girl: "Military secrets are the most fleeting of all. I hope that you and I exchanged something more permanent."
10. What is Scotty's real name?

Answer: Montgomery Scott

Although he only gets called Montgomery Scott when he is about to die and Kirk is reading out his commendations onto the ship's log: even his girlfriend calls him Scotty! ("The Lights of Zetar", season 3)
