1. Jungle Hijinxs
Answer: Rambi
Although Jungle Hijinxs, the first level of "Donkey Kong Country", won't offer up much in the way of difficulty, being able to complete the stage on Rambi the Rhino's back is a bit of a nice bonus. Found in the back half of this low-impact stage, using Rambi is also your first opportunity to access hidden bonus areas, of which you'll find two before the end of the level.
2. Oil Drum Alley
Answer: Rambi
All the way in the penultimate stage of the game, Oil Drum Alley is the first level in Kremkroc Industries, Inc., a terrifying, metal-strewn factory facing heartier foes than the Kongs might be used to. Rambi is located in the second half of the level, but you'll be able to retain him for the remainder, using him as a bit of a buffer between you and any fire hazards or Manky Kong enemies.
3. Manic Mincers
Answer: Rambi
The game's thirtieth level, Manic Mincers will take you into Chimp Caverns to make it through a stage full of giant, rotating, grinding tires that'll do a number on the Kongs if they come into contact. Fortunately, Rambi is a useful companion to have along for the level since he can unlock some bonuses. Like the Kongs, however, Rambi is powerless to take out these inanimate, mechanical foes.
4. Coral Capers
Answer: Enguarde
The first underwater level of the game, Coral Capers is found in a cove in Kongo Jungle and acts as a primer for swimming controls, allowing Donkey Kong and Diddy to get from start to finish without the security of terra firma. It's also the perfect opportunity for the pair to use Enguarde, the swordfish, for the first time, riding on his back to knock out weaker foes and locate bonus areas.
5. Clam City
Answer: Enguarde
The final level of Vine Valley, Clam City is the second opportunity in the game to collect Enguarde and use him to navigate (if you didn't collect Enguarde tokens and visit his bonus stage) since it's also the second underwater level overall. In this one, the Kongs are ore likely to need maneuverability in the water to speed along since clams will fire pearls in predetermined directions along the route, damaging the characters with these projectiles at a regular rate. Enguarde is early in the map, but he won't be able to kill the clams.
6. Poison Pond
Answer: Enguarde
Found in Kremkroc Industries, Inc., Poison Pond features all of the awful foes you'd expect in both an underwater level and in a factory setting. Enguarde will help here, once again, for maneuverability in the green waters of the stage, and this will go a long way when the Kongs need to dodge mobile enemies and massive Mincers throughout.
7. Temple Tempest
Answer: Expresso
Found partway through Vine Valley, Temple Tempest probably won't be your first encounter with Expresso the ostrich, especially since you'll be likely to find three Expresso coins well before then and leverage his bonus level well in advance. In Temple Tempest, he's particularly useful as his limited flight capabilities (yes, a flying ostrich) will make quick work of larger leaps that the Kongs need to make to navigate the temple.
8. Orang-utan Gang
Answer: Expresso
Found midway through Vine Valley, Orang-utan Gang is an opportunity for the Kongs to face Manky Kong, an orangutan foe that'll attack from a distance, in the tree canopies. Expresso appears about halfway through the level and will be of great assistance in navigating over any pitfalls. With great skill, backtracking through the level to use him to access an early bonus area might be worth it.
9. Ice Age Alley
Answer: Expresso
A level midway through Gorilla Glacier, Ice Age Alley is a map plagued by a fierce snowstorm-- one that complicates the level by making a visual disruption throughout. Fortunately, navigation can be done with a bit more ease with Expresso-- you can find him immediately before the entrance of the level.
It especially helps that the level has a number of large gaps to jump, and the ostrich isn't impeded by the storm.
10. Bouncy Bonanza
Answer: Winky
Though Winky makes his first appearance in the first level of the Monkey Mines (in a mine, no less, in the level Winky's Walkway), Bouncy Bonanza is an apt second level for the froggy friend since he can enhance the jumping capabilities of both Kongs.
In addition to numerous tires that the pair can expand their jumps atop, Winky's massive leaps are also increased by these means-- and some of those jumps are high!
11. Millstone Mayhem
Answer: Winky
The first temple stage in "Donkey Kong Country", Millstone Mayhem is near the end of the Monkey Mines and will be the first instance in which the Kongs face Gnawties as they ride their way through large, circular millstones. The millstones are often massive, and dodging them can result in a tight squeeze, but with Winky, who appears in the level, they can sometimes leap clean over, avoiding the issue altogether.
12. Rope Bridge Rumble
Answer: Winky
The last level in Gorilla Glacier, Rope Bridge Rumble is found in a high-platform-laden location akin to Vine Valley's Tree Top Town. Winky, in this level, is found in a bonus area but he'll be retained when you head back into the main course and be a great asset in hopping from landing to landing.
This will mark the last in-level appearance of Winky unless you collect his coins and visit his stage.
