Monterey Jack was originally made by Mexican Franciscan friars in Monterey. It is now ubiquitous on pizzas.

Roquefort was the first cheese ever to be defined by an Appelation d'Origine Contrôlée ruling. It can be matured only in the caves of Mont Combalou.
