Quiz Answer Key and Fun Facts
1. If there is one quintessential Wisconsin food, it has to be deep fried cheese curds. According to most recipes, how long should they be fried?

Answer: 1 to 2 minutes

Most recipes call for 1 to 2 minutes. Much longer and you would have a gooey mess on your hands or rocks hard enough to break your teeth.

One of Wisconsin's most popular restaurant establishments is Culver's, which is known for burgers, custard and cheese curds. The chain can be found in 25 states, mainly in the Midwest, west and southern states.
2. Custard is one of Wisconsin's most popular food items. Which of these custard establishments in Milwaukee has been around the longest?

Answer: Gilles

Gilles was established in 1938. Leon's was next, in 1942. Both Kopps and Kitts were established in 1950. Custard differs from ice cream in that it contains egg yolks.

While my personal favorite is Leon's, especially their butter pecan, Kopps is also excellent, and has a wider variety of flavors.
3. Bratwurst may be Wisconsin's most popular meat. Which of these Wisconsin based companies has been making sausage the longest?

Answer: Usinger's

Usingers was founded by Fred Usinger in downtown Milwaukee in 1880.

Nueskes is second, starting in 1933. Johnsonville was started in 1945, and Klements began operations in 1956

Bratwurst and sausage are a deep part of Wisconsin culture. The Milwaukee Brewers have races between sausages at their home games at American Family Field, sponsored by Johnsonville. American Family is the only baseball stadium where bratwurst outsells hot dogs on a regular basis.
4. Kringle is the official state pastry of Wisconsin. Immigrants from what European nation brought it to the state?

Answer: Denmark

Kringle is from Denmark. It is a flaky layered pastry, usually filled with either fruit or nuts. Pecan, apple and blueberry are popular flavors. The standard Kringle has 80 layers of dough. Kringle was made the official state pastry of Wisconsin through the efforts of state representative Cory Mason (who later became the mayor of Racine, kringle capitol of America).

If you would like to have some delicious Kringle for yourself, O and H bakery will ship kringles all across the country.
5. Cream puffs are another Wisconsin favorite. How many cream puffs are sold at the Wisconsin State Fair each year, on average?

Answer: 400 thousand

According to the State Fair, they sell around 400,000 cream puffs every year. Cream puffs are exactly what they sound like: pastry dough filled with large amounts of whipped cream. They are almost certainly bad for your health.

Since the fair is in August, if you would like to try them other times of the year, visit the Wisconsin Bakers Association, they have a great recipe.
6. The Butter Burger is another Wisconsin classic. What Wisconsin community claims the invention of the butter burger?

Answer: Seymour

Seymour, in Outagamie County, has one big claim to fame: the invention of hamburgers by Charlie Nagreen at the Seymour Fair in 1885. Several other places in the United States claim to the home of the hamburger, but Seymour seems to be earliest.

Butter burgers can be created either by adding butter to the meat or soaking the buns in large quantities of butter. In either case, butter burgers create extra work for cardiologists. Culver's is a large restaurant chain well known for their butter burgers.

Both Solly's and Sobelman's are legendary for butter burgers in Milwaukee. If you are at a
Packers game, check out Kroll's.
7. Booyah, a meat stew popular in northern Wisconsin, has its origins in what European country?

Answer: Belgium

Booyah has its roots in Belgium. To make the stew, take beef, chicken or pork (sometimes all three) and add lots of vegetables into a very large (50 gallon) pot. Let it simmer for several days.

Booyah has a social aspect to it as it is often served at events such as fairs and church socials. Churches and non-profit organizations will have booyah fundraisers.

If you would like to try it for yourself, search for "booyah recipe".

Make sure you have a large enough kettle.
8. Fish Fries are a long time staple of Wisconsin food culture. What day of the week are they usually held on?

Answer: Friday

The Friday Fish Fry has its origins in the strong Roman Catholic tradition of Wisconsin. Church leaders asked parishioners to avoid eating red meat on Fridays. Local restaurants saw a potential for customers, and started serving fried fish. While the restriction was later curtailed to apply only to Lent, by that time the Fish Fry was a well established Wisconsin tradition.

A typical fish fry will include deep fried fish (well, duh) usually cod, perch or walleye, although some establishments have expanded menus. The fish comes with rye bread, coleslaw, a side of potatoes (fries or potato pancakes) and condiments such as lemon wedges and tartar sauce.

If you want to start an argument, claim you know where the best fish fry is. If you are interested in trying it out, google "fish fry" and the name of a Wisconsin community. You will find plenty of choices.
9. No Wisconsin food quiz would be complete without a question on cheese. Which of these cheeses was invented in Wisconsin?

Answer: Colby

Colby cheese comes from Colby, Wisconsin. (Who would have guessed?) It was developed by the Steinwand family in 1885. It is similar to cheddar, but smoother. Colby is generally used as a snack cheese. It is often combined with Monterrey Jack to create CoJack cheese. Wisconsin remains the leading producer of Colby cheese.

Cougar Gold is a cheddar that is made at Washington State University. Maytag Blue comes from Newton, Iowa. And Velveeta was created by Emil Frye in Monroe, New York in 1918. Yes, Velveeta has been around for a century.
10. You can wash everything down with a Brandy Old Fashioned, Wisconsin's unofficial state cocktail. Along with brandy, what herb liquor will you need?

Answer: Angostura Bitters

Angostura Bitters is the key ingredient in an Old Fashioned. It was first concocted by a Venezuelan doctor in 1824, as a medical treatment. His sons moved the plant to Trinidad in 1875, and the tonic has been made there since. It became Angostura Bitters in 1904. The exact formula is a closely guarded trade secret.

Campari is a dark red, bitter Italian liquor. Jagermeister is a 70 proof Geman herbal based liquor. And Amaro is a bitter liquor from Italy.
