Kirschwasser is German for "cherry water". It is a colourless fruit brandy, usually drunk neat and often served as an aperitif. It is made from morello cherries which are cultivated in the Black Forest region of Germany. Despite being a sour cherry, it is often used in desserts, most notably Black Forest cake or as it is known in German "Schwarzwälder Kirschtorte".
