In "Last Holiday", Georgia Byrd is described as a timid, shy and self-conscious woman who has a passion for cooking. Georgia loves cooking, but never eats any of her fantastic meals and always gives them to her neighbor and his grandfather. When she is diagnosed with a fatal disease, her total personality changes and she becomes a new woman.

Georgia has a crush on Sean Williams, who also works where Georgia works. In the beginning of the movie, Sean asks Georgia if she would be interested in going to a basketball game with him, but she declines his offer because she does not even know if she will still be alive in a couple of weeks. Later in the movie, Sean finds out about Georgia's disease and follows her to the hotel where she is staying.

When Georgia finds out about her life-ending disease, she decides to empty out her IRA and savings account and spend it on a luxury vacation. Mr. Kragen tries to commit suicide after being thoroughly embarrassed by Georgia at dinner and being rejected by Ms. Burns. Mr. Kragen goes up to the top floor of the hotel and sits on the ledge and contemplates suicide. Georgia goes up to the ledge and explains to Kragen that if he was nicer to people, then he would be a happier person. Eventually, Kragen agrees with what she says and gets off of the ledge with her.

The CAT scan machine that Dr. Gupta had used was broken when Georgia came into his office. The CAT scan machine generated a pattern on Georgia's CAT scan that could have been interpreted as a brain tumor. Georgia and the employees of the Grandhotel Pupp find out the real results when Dr. Gupta faxes the hotel and says that the CAT scan is a mistake and there is nothing really wrong with Georgia.

The first person to tell Georgia that the CAT scan is a mistake is Gunther.
