Answer: Mary Margaret had an arraignment

Mary Margaret was accused of murdering Kathryn Nolan, so she was sent to jail. An arraignment had been set for the next day at 8:00 in the morning. Regina would be there, and Emma knew that Regina would use Mary Margaret's escape as proof that she was guilty of murder.

It would later be revealed that Regina had planted the keys in Mary Margaret's cell hoping that Mary Margaret would use the keys and escape thus making her look guilty. Fortunately for Emma and Mary Margaret, they both arrived back at the sheriff station at 8:00 before Regina got there.

Emma searched for the escaped Mary Margaret. While driving, she nearly ran into Jefferson. When he asked what she was doing, she replied that she was looking for a lost dog, Spot. Emma admitted she made up the story when Jefferson caught her trying to rescue Mary Margaret.

Jefferson and Grace visited the toy cart where Grace found a rabbit. Grace really wanted it for her tea party, but it cost one silver, which was more than Jefferson had. The old woman (later revealed to be Regina in disguise) wouldn't lower her price, so Grace left without a rabbit. To make up for this, Jefferson made a stuffed rabbit to give to Grace.

Jefferson was at one point married but something happened to his wife prior to the flashbacks. This was something which Jefferson didn't want to talk about but related to him traveling between worlds using his hat. As a result, he stopped traveling between worlds - at least until Regina made him an offer. Jefferson also had a daughter named Grace.

Jefferson tried to make several hats that would send him back to the Enchanted Forest but none of them worked. He believed Emma had magic and was capable of creating a hat that was magical. Emma worked on the hat but eventually went to free Mary Margaret. Jefferson was about to attack Emma when Mary Margaret knocked him out of the window.

As revealed in the episode "An Apple Red as Magic", Jefferson survived the fall.

During one of Jefferson and Emma's talk, Jefferson explained about the curse that kept everyone in Storybrooke and replaced their real memories with fake ones. Jefferson was not affected by the curse and tried to convince Emma that the curse was real and that magic was real. Emma just thought he was insane and had been reading Henry's book of fairy tales.

While working for Jefferson, Emma noticed several hats. She mentioned that she thought Jefferson had enough hats. Jefferson replied that none of them were magical. Jefferson's behavior also seemed odd to Emma; Jefferson got in her personal space often and talked about magic as if it existed. Also, while looking around his house, she noticed several tea sets.

These three things led her to believe that Jefferson thought he was the Mad Hatter.

The Queen of Hearts had taken Regina's father, Henry, away for leverage. It wasn't until after Regina had retrieved Henry that Jefferson learned what it was that Regina was seeking. Regina knew Jefferson wouldn't help if he knew what Regina was looking for. Regina and Henry left through the looking glass and allowed Jefferson to be captured.

Answer: create a hat that can transport between realms

After retrieving Henry, Regina and Henry left Wonderland through the looking glass. Since the same number of people must leave the hat that entered, Jefferson had to stay behind. Jefferson explained his situation to the Queen and Knave of Hearts. The knave responded that since Jefferson required a magical hat to leave Wonderland that would be his task: create a magical hat like the one he had that would allow him to transport between realms.

Answer: if she could borrow his book

Emma met Henry outside his school and noticed a female student whom she recognized as the girl that Jefferson claimed was his daughter. Emma asked Henry if she could see his book of fairy tales, which Henry gladly allowed her to borrow. Emma found a picture of Jefferson as the Mad Hatter and seemed to start believing in the curse, however small her belief was.
