1. Which inn in the Shire was torn down during Lotho Sackville-Baggins' rule and replaced by a guard house?

Answer: The Bridge Inn

After Frodo and the four hobbits left the Shire in TA 3018, Lotho recieved money from Isengard which he used to buy up property, and started to industrialize the Shire. And one of his deeds was to tear down the Bridge Inn and replace it with a guardhouse.
2. At which inn would you be most likely to find the old Gaffer?

Answer: The Ivy Bush

The Old Gaffer was a frequent guest at the Ivy Bush. It was here that the Old Gaffer had a conversation with Old Noakes, Daddy Twofoot, Ted Sandyman and others regarding Bilbo and Frodo.
3. What was the name of the inn that lay at the crossroads of the Greenway and the Great East Road?

Answer: The Prancing Pony

At the point where the Greenway and the Great East Road met you'd find the village of Bree, and the famous inn called the Prancing Pony. It was visited by Men, Hobbits and even Dwarves. The Inn keeper was Barliman Butterbur.

Answer: The Green Dragon

Sam's cousin, Halfast Gamgee, had told Sam that he had seen these giants, which he called tree-men. Sam told the story to people at the Green Dragon, but they didn't believe him. Sam believed it, though.

Answer: The Golden Perch

As the hobbits discuss whether to take the shortcut or not to the Bucklebury Ferry, Pippin states that 'Shortcuts make long delays' and he wanted therefore to go the long way to the village of Stock, where the Golden Perch lay. But then Frodo states that 'Shortcuts makes delays, but inns make longer ones'. (One of my favorite quotes from the book)

At the point where Merry asks Strider about how long it is to Rivendell from Bree, Strider states that he doesn't believe the road had been measured in miles beyond the Forsaken Inn, which lies a day's journey East of Bree.

Answer: The Floating Log

As the Hobbits travel back to the Shire, they intend to stay for a night at The Floating Log, but as they come to the place where it once stood, they are met by a barrier and a gate. They are arrested by the Sheriff's men for a number of matters: gatebreaking, tearing up the rules, assaulting gate-keepers, trespassing, sleeping in Shire buildings without leave, and trying to bribe gate-keepers with food.
8. Where did Pippin meet the young Bergil?

Answer: The Old Guesthouse

The Old Guesthouse was a house that was used by travelers from all over Gondor and beyond, and served a purpose almost like any other hotel in our days.

Bilbo received a letter from Gandalf, written by Thorin Oakenshield, that said that the Dwarves would be waiting at the Green Dragon Inn at 11:00 the same day.

He was the innkeeper at the Prancing Pony in Bree. He was a good friend of Gandalf and Gandalf therefore entrusted it to him to deliver a letter to Frodo, a task he forgot until Frodo himself came to Bree.
