Answer: Daleks

It is the Daleks. The Doctor demonstrates that showing up on a Dalek ship waving around a Dalek eyestalk is a bad idea, as is carrying a Cyber head onto a Cyberman ship. The Weeping Angels grab Clara on the surface of Trenzalore and she escapes by virtue of being naked. The Sontarans are quickly dispatched by the Church of the Papal Mainframe, which actually apologizes for killing them.
2. What does the Doctor name the Cyberman head he carries around?

Answer: Handles

Handles is quite a useful companion, providing all sorts of information. He breaks down after roughly 300 years.
3. What is the name of the high priestess who leads the Church of the Papal Mainframe?

Answer: Tasha Lem

Tasha Lem is the Mother Superior of the Papal Mainframe. She comes to an alliance with the Doctor to prevent the renewal of the Time War should Gallifrey return. Lem is portrayed by Orla Brady, an Irish actress probably best known for her work on the US Science Fiction series "Fringe".
Tasha Yar is a character in "Star Trek: The Next Generation" played by Denise Crosby. Tasha Smith is an actress who frequently appears in Tyler Perry projects. Tasha Tilberg is a Canadian fashion model.

Answer: 300 years

The Doctor tells Clara that it was 300 years since he had sent her back to Earth. The Doctor is considerably older, walking with a limp, but still active. However, he still dances, just as badly as he did at Amy's wedding.

The Doctor notes that the War Doctor (played by John Hurt) counts as a regeneration, and that the Tenth Doctor regenerated after being shot by the Daleks in "The Stolen Earth". The Doctor explains that adds up to 12 regenerations, and that he is on his last life.

In a scene reminiscent of "Asylum of the Daleks" (2012), the staff of the Church have been converted into Dalek/Human hybrids. The Daleks attempt to trap the Doctor, but Tasha Lem rescues him at the last moment.

Answer: Poems

They contain poems, which are supposed to be classier than the jokes. Crackers are a holiday tradition in the UK and Ireland. They are cardboard tubes in brightly wrapped paper which are pulled apart; when they break, they make a cracking or breaking sound.
The poem appears to be made up for the episode. While the lack of a joke disappoints the Doctor, he seems to enjoy the poem nevertheless.
The name of the poem that Clara reads is "Thoughts on a Clock" by Eric Richie, Jr.:

"...And now its time for One last bow.
Like all your other selves,
Eleventh's hour is over now.
The clock is striking twelve's."
8. What is Matt Smith's last full line as the Doctor?

Answer: "I will always remember when the Doctor was me."

He utters a brief "hey" right before switching, but his last complete line is "I will always remember when the Doctor was me." The Doctor yells "Love from Gallifrey" right before releasing enough regeneration energy to torch the surface of Trenzalore, and all the Daleks on it. "Raggedy Man" is said by Amy Pond (Karen Gillan), who makes a very brief appearance.
9. What is Peter Capaldi's first line as the new Doctor?

Answer: "Kidneys! I've got new kidneys."

The appearance of Peter Capaldi is rather sudden. One second Matt Smith is there, the next second Capaldi is. And he is talking about his kidneys. When the Doctor makes the rather vague statement "I don't like the color," Clara responds, "The color of your kidneys?"
This isn't all that unusual, as very often the first thing a new Doctor does is give his new body a review to make sure all the parts are in the correct place.
10. Who directed "The Time of the Doctor"?

Answer: Jamie Payne

Jamie Payne directed the episode. He has been working in British television since 2002, and directed "Hide" which aired in April 2013. "The Time of the Doctor" was written by Moffat, who has been the show runner for "Doctor Who" since 2010, and has written many of the show's best episodes. Dan Starkey played the Sontaran in "Day of the Doctor" and he regularly plays Strax. Marcus Wilson was the Executive Producer, and has worked with Moffat since 2010.
"The Time of the Doctor" was the 800th episode of "Doctor Who".
